Recipes-in-a-Jar make fantastic DIY gifts for just about anyone. However many of the recipes online do not take into account dietary preferences, allergies or health benefits of the ingredients included. That shouldn’t stop you, though. Gluten-Free, Vegan Chocolate Chip Cookies in a Jar

Gluten-Free, Vegan Chocolate Chip Cookies In a Jar

Ingredients & Supplies

In a 30 oz Mason Jar or similar container, layer the following ingredients:

  • 1 cup gluten-free baking flour blend
  • 1 cup coconut flour
  • 3/4 teaspoon grey salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon wheat and corn-free baking powder
  • 3/4 cup demerara brown sugar
  • 1 cup coconut palm sugar
  • 1 cup dairy-free chocolate chips

When it’s time to make the cookies, add the following to the jar contents:

  • 1/2 cup unsweetened applesauce
  • 2/3 cup vegan butter
  • 1/12 teaspoon vanilla extract

Instructions

In a large bowl, thoroughly blend apple sauce, butter and vanilla extract. Add contents of jar and mix until combined then refrigerate dough for one hour. Preheat oven to 350 degrees while you line cookie sheets with parchment paper or silicone. Roll dough into 1 inch balls and place on cookie sheet. Bake for 12-14 minutes or until the bottom of the cookies have turned golden brown. Cool on baking sheet for 20 minutes before transferring to cooling rack to cool to room temperature.

Vegan, Gluten-Free, Paleo-Friendly Lentil Curry Soup In a Jar

Ingredients & Supplies

In a 15 oz Mason Jar or similar container, layer the following ingredients:

  • 2/3 cup orange lentils
  • 2/3 cup green lentils
  • 1 tablespoon curry powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon garlic granules
  • 2 veggie bouillon cubes
  • 1/2 teaspoon chili flakes

When it’s time to make the soup, add the following to the jar contents:

  • 1 medium yellow or white onion, minced
  • 1 tbsp cooking oil (olive or coconut works best)
  • 1 14oz can coconut milk
  • 4 cups water

Instructions

In a medium pot on medium heat, heat oil and saute onion until translucent. Remove wrappers from bouillon cubes and add to pot along with all contents from the jar. Add water and coconut milk. On high heat, bring to a boil. Once boiling, reduce heat to low and simmer until lentils are tender, approximately 20 minutes. Season with salt and pepper to taste.

Protein-Packed Hot Chocolate in a Jar

Protein-Packed Hot Chocolate In a Jar

Ingredients & Supplies

In a 15 oz Mason Jar or similar container, layer the following ingredients:

  • 1/2 cup protein powder*
  • 1/2 cup coconut palm sugar
  • 1/2 cup raw cacao powder

*To make homemade protein powder, combine 1/4 cup coconut flour, 2 tbsp shelled hemp seeds, and 2 tbsp rolled oats in a blender or coffee grinder and blend until smooth

When it’s time to make the hot chocolate you will need the following:

  • 10 oz warmed almond milk

Instructions

Shake contents of jar until thoroughly mixed. Add 3 tablespoons to a mug. Heat 10 oz almond milk in saucepan over medium heat, or in microwave for 1 minute. Add warmed almond milk to mug with hot chocolate mix and enjoy! If you’re feeling extra indulgent, add coconut whipped cream or vegan marshmallows.
