Vita Health Pancakes Two Ways

Every summer, Vita Health’s head office ascends upon the stores, one by one, to take over their kitchen and cook you up a pancake breakfast on us.  While there’s nothing better than getting a free breakfast, we know that not everyone can make it to six breakfasts throughout the summer. So we thought we’d share our pancake recipes.  After years of refining and tweeking, we’re pretty happy with the results! Whether you’re looking for a healthier version of breakfast chain pancakes, or you’re working with dietary restrictions, we’ve got you covered. Gluten Free, Vegan Pancakes

1 ½ cups Enjoy Life Pancake Mix

1 tablespoon Egg Replacer

1 cup sparkling water

1 ½ cup hemp milk

1 tablespoon vegetable oil

1 teaspoon cinnamon

1 apple, peeled, cored and diced

Mix together sparkling water & egg replacer then add to pancake mix along with rest of ingredients.  Do not over mix!
Poor onto hot griddle.  Flip once bubbles form and edges are dry. Pancakes are done once golden brown!

Whole Wheat Blueberry Pancakes

2 cups organic whole wheat flour

2 teaspoons baking powder

2 teaspoons organic cane sugar

2 eggs, beaten

2 cups organic milk

2 tablespoons vegetable oil

dash of salt

Mix together dry ingredients then add liquids. Do not over mix! Pour onto hot griddle and add organic blueberries. Flip once bubbles form and edges are dry. Pancakes are done once both sides are golden brown!
