BUMP Blended Protein Crunchy Lettuce Wraps

If you’ve been craving food that’s bright, crunchy, and packed with tasty vegetables, you’ll love the BUMP lettuce wrap recipe below! It was developed by Anna Borys from RRC and is all things delicious.

We love this recipe because it can double as a salad the next day with the leftover vegetables and BUMP mixture. Throw some of the smaller pieces of butter lettuce (or other greens you’ve got in your fridge) and there you have it, another meal. 


Sweet Ginger Sauce: 

  • 2 tbsp tamari or soy sauce
  • 3 tbsp brown sugar
  • 2 tsp fresh ginger, grated
  • ½ lemon, juiced (1 tbsp)
  • ¼ cup cold water
  • 1 tsp corn Starch

Sesame Ginger Ground Beef: 

  • 1 lb BUMP Beef + Plant Blend
  • 2 tsp sesame oil
  • ½ cup onion, diced
  • 2 tbsp garlic, minced
  • ¾ cup mushrooms, diced
  • ¼ tsp chili flakes

Salad with Cilantro Lime Dressing: 

  • 2 cups carrot, julienne
  • 2 cups cucumber, julienne
  • ¼ cups green onion, thinly sliced
  • ¼ cup cilantro, finely chopped 
  • 1 tbsp mint, finely chopped (optional)
  • 2 tsp sesame oil
  • 2 tsp tamari or soy sauce
  • 1 tsp lime, juice
  • 1 tsp lime zest 
  • 2 heads of butter lettuce (romaine can substitute)


Sweet Ginger Sauce:

  • In a small saucepan, whisk together the tamari, brown sugar, ginger, lemon juice, and 2 tbsp water
  • Bring to a simmer, whisking until sugar has dissolved
  • In a small bowl, whisk together corn starch and 2 tbsp of cold water until smooth. Whisk into simmering sauce until slightly thickened. Set aside. 

Sesame Ginger BUMP Filling:

  • Heat a medium sized non-stick sauté pan over high heat. Add BUMP Beef + Plant Blend and cook, stirring constantly until well browned.
  • Once browned, remove meat from pan and set aside.  Reduce heat to medium high.
  • Add sesame oil, onions, garlic, ginger, mushrooms, and chili flakes. 
  • Cook, stirring occasionally for about 3-4 minutes until mushrooms have released their juices. 
  • Remove pan from heat. Add the meat back to the pan along with sauce and mix until combined. 

Salad with Dressing: 

  • In a small mixing bowl, whisk together sesame oil, cilantro, lime zest, tamari, mint and lime juice. Set aside. 
  • In a medium sized mixing bowl, toss together carrot, cucumber and green onion with dressing. 

To assemble: 

  • Using the larger outer leaves of the butter lettuce, spoon in 2 tbsp of the meat mixture with 2 tbsp of the salad.
  • Extra garnishes could also include a squeeze of lime, crushed peanuts or fresh bean sprouts.
