Spiced Banana Walnut Loaf

Ingredients:

3 cups whole wheat flour

1/4 tsp salt

1 1/2 tsp NOW Better Stevia

4 1/2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground clove

1/2 cup of chopped walnuts

3 eggs seperated

1 cup milk (dairy or alternative)

6 tbsp vegetable oil

2 1/2 tsp vanilla extract

1 cup mashed ripe bananas (about 2 bananas)

1 ripe banana cut in half

Directions:

Preheat oven to 350 degrees Fahrenheit. Oil and flour a 9 x 5 inch loaf pan

In a large bowl sift together the dry ingredients. Beat egg whites and set aside.

Stir together the egg yolks, milk, vegetable oil, vanilla, and mashed banana. Add the dry ingredients and beat to combine. Stir in chopped walnuts then gently fold in beaten egg whites.

Pour batter into prepared loaf pan. Top with one banana sliced in half if desired.

Bake in oven for 55 – 65 minutes. Remove and let rest for 10 minutes then gently transfer to a cooling rack.
