Dairy-free Cheddar & Chive Smashed Potatoes
- 1 bag Daiya Cheddar Cutting Board Shreds
- 1 lb potatoes, baby
- 1 tbsp avocado oil
- salt and pepper to taste
Place potatoes in a large pot of salted water. Bring to a boil; cook, covered for 8-10 minutes or until fork-tender. Drain in a colander.
Place in lightly greased baking sheet and with the back of a fork gently press until the potatoes burst. Continue until all potatoes are smashed.
Drizzle with olive oil and sprinkle Daiya Cutting Board Cheddar Style Shreds on potatoes until evenly coated. Add salt and pepper to taste.
Bake at 400 F (205 C) for 15 minutes or until cheese is melted and potatoes are golden brown.
Remove from oven and garnish with freshly chopped chives.
