Christmas Morning Crepes
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- ½ cup milk
- ½ cup water
- ¼ teaspoon salt
- 2 tablespoons butter, melted
- 1 lemon zested

In a big mixing bowl, whisk together flour and eggs. Slowly add milk and water while stirring until it's all mixed up. Add a pinch of salt and the melted butter and lemon zest, then keep beating until the batter is nice and smooth.

Heat up a pan on medium-high heat with a bit of oil on it. Pour or scoop about 1/4 cup of batter onto the pan for each crêpe. Tilt the pan in a circle so the batter spreads evenly.

Cook until the top isn't wet anymore and the bottom is light brown, usually 1 to 2 minutes. Use a spatula to loosen the edges, flip the crêpe, and cook the other side until it's light brown too, which takes about 1 more minute. Serve it up while it's hot with your favourite toppings like fresh berries, oranges or keep it simple with maple syrup and butter!
