Cookie Dough Stuffed Dates

WITH LILY’S DARK CHOCOLATE BAKING CHIPS

INGREDIENTS:

Whole Dates

1 batch cookie dough (see below)

Lily’s dark chocolate baking chips

Coarse sea salt for garnish

COOKIE DOUGH:

1 1/2 cups almond flour

1/4 cup peanut butter

1 tsp vanilla extract

1/4 tsp salt

1/4 cup maple syrup

1/4 cup Lily’s dark chocolate baking chips

DIRECTIONS

Slice open and remove pits from dates

In a food processor, blend together all cookie dough ingredients, except baking chips, until a dough forms

Transfer dough to a medium bowl and fold in Lily’s baking chips

Generously stuff each date with cookie dough and set aside on a plate

line a plate or baking sheet with parchment paper.

Melt 1 cup Lily’s baking chips over low heat with some coconut oil

Dip the ends of each date into the melted chocolate and place on sheet/plate

garnish each date with coarse sea salt

Place in fridge to set for about 10 minutes and then transfer to a covered dish and keep in fridge until ready to serve.
