GT's Gingerade Spiced Apple Bread

 

INGREDIENTS

Dry:

  • 2½ cup gluten-free flour
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1½ tsp Xanthan gum (if not gluten-free flour)
  • 1 tsp nutmeg 
  • 2 tsp cinnamon
  • 2 tsp powdered ginger
  • 1 tsp salt

Wet:

  •  cup applesauce
  • ½ cup unsweetened coconut milk
  • ½ cup melted coconut oil
  • 2 tsp vanilla
  • ½ cup GT's Gingerade Kombucha
  • ⅔ cup fresh apple, peeled and chopped

DIRECTIONS:

1. Preheat oven to 350°F. Spray a loaf pan with cooking spray or brush with coconut oil, then line with parchment paper. Set aside.

2. In a bowl, combine all the dry ingredients. Add the wet ingredients except for the apples. Whisk until combined.

3. Fold in the chopped apples and transfer to load pan, spreading it evenly. Bake at 350°F for an hour.

4. Remove the loaf from the oven and let it cool. Once cooled, sprinkle powdered sugar. Slice and enjoy!
