Organic Meadow Berry Layered Chia Cups

Not only are chia cups a healthy on-the-go snack, they’re also quick and easy to make. These berry chia cups are packed with protein thanks to the addition of Organic Meadow cottage cheese. This recipe can easily be doubled for extras to have in the fridge all week.

Ingredients:

 

For the blueberry layer:

  • ¾ cup Organic Meadow Blueberry Kefir
  • ½ cup organic blueberries
  • ¼ cup Organic Meadow 2% Cottage Cheese
  • ¼ cup organic chia seeds

For the Raspberry layer:

  • 1 cup organic raspberries
  • ¾ cup Organic Meadow 3.8% Plain Yogurt
  • 1 tbsp organic honey
  • ¼ cup organic chia seeds

For the topping:

  • ½ cup Organic Meadow 3.8% Plain Yogurt
  • Fresh organic blueberries
  • Fresh organic raspberries

Instructions:

 

1. For the blueberry layer, combine blueberry kefir with blueberries and cottage cheese in a food processor or blender. Blend on high until smooth. Stir in ¼ cup chia seeds. Divide mixture evenly among four 250-mL (1 cup) jars or small glasses. Chill in the refrigerator to set, at least 15 minutes.

 

2. Meanwhile, for the raspberry layer, combine raspberries with ¾ cup plain yogurt and honey in the same food processor or blender. Blend on high until smooth. Stir in ¼ cup chia seeds. Divide mixture evenly over top of each chilled blueberry layer. Chill until set, 15 more minutes.

 

3. Top each jar with 2 tbsp yogurt. Sprinkle each with additional blueberries and raspberries. Seal with lids or cover with plastic wrap and refrigerate until ready to serve.
