- Local sourcing: Topped with locally made Bothwell and Chaeban Artisan cheeses and seasonally available vegetables; imported Parmigiano Reggiano is used as a finishing touch.
- Cooking method: Baked with live fire at a hearth temperature of 600 to 650F to deliver light charring and a leopard spotted undercarriage.
